Creamy white to yellowish-brown powder. Dissolve in water at room temperature into translucent viscous liquid, insoluble in ethanol, isopropyl alcohol and acetone and other organic solvents. Xanthan glue solution has good viscosity and is quite stable in the range of 4 ~ 80ºC. When the concentration of ethanol, isopropyl alcohol or acetone in water exceeds 50% ~ 60%, it will cause the precipitation of Xanthan Chemicalbook glue. The viscosity of xanthan glue solution is not affected by Ph value in the range of Ph value 1.5 ~ 13. Xanthan gum is a natural polymer compound, the LD50 of rat oral LD50 > 10g/kg, ADI does not need special regulation (FAO/WHO, 1994)
(1) Xanthan gum is used in baked goods (bread, cakes, etc.) to improve the water retention and softness of baked goods during baking and storage to improve the mouthfeel and extend shelf life of baked goods;

(6) The use of xanthan gum in ice cream and dairy products (combined with guar gum and locust bean gum) can stabilize the product;
(7) Compounds such as xanthan gum, carrageenan and locust bean gum are also commonly used in jelly and candy processing.
