Sodium benzoate, also known as sodium benzoate, is a kind of organic matter, chemical formula C7H5NaO2, is a white granular or crystalline powder, odorless or with a benzoin odor, slightly sweet taste, convergence taste, relative molecular weight of 144.12, stable in air, soluble in water, its aqueous solution pH value is 8, soluble in ethanol.
Benzoic acid and its salts are broad spectrum antimicrobial agents, but their antibacterial effectiveness depends on the pH value of the food. With the increase of acidity of the medium, its bactericidal and bacteriostatic effect is enhanced, while in alkaline medium, it loses bactericidal and bacteriostatic effect. The optimum pH value of its anticorrosion is 2.5~4.0
